Black Eye Peas

 Happy New Year

I decided it was time to bring back some old traditions. You know what they say, eating Black Eye peas on New Years is supposed to bring good luck. 😁
I could not find a recipe I liked so I made up my own.
I used Melissa's Black Eye peas, I got mine at Whole Foods.  They were out of dry beans and I did not want to use can. Melissa's are presoaked and partially cooked so I won't take as long.

1 11oz Melissa Black Eye Peas
1 onion, chopped
3 stalks celery, chopped
1 poblano pepper, chopped
1/2 red, orange and yellow bell peppers, chopped
4 cloved garlic, chopped
5 straps bacon, chopped in large pieces
Cajun sausage, chopped in half lengthwise and then each half in half again lengthwise and cut into pieces.
1-2 Tablespoon Cajun spices
chicken broth
rice

Fry your bacon until crisp. Remove bacon and drain on paper towel. Add onion and celery to pan. Cook for a minute or two. Add bell peppers, poblano pepper and cook until soft. Add garlic, cook for another minute. Add Black Eye Peas and Cajun spices, cover with enough chicken broth to cover beans by about 1/2 to 1 inch. Cover and cook until Peas are tender.

Meanwhile, cook rice in a separate pan.
Serve with cornbread if you like.
